Southern Baked Pineapple Casserole

This sweet and buttery pineapple casserole is a Southern favorite, perfect as a side dish or dessert. Made with crushed pineapple, eggs, butter, and bread, it’s a nostalgic comfort food everyone loves!

Ingredients
  

  • - 1 cup white sugar
  • - ½ cup unsalted butter softened
  • - 4 large eggs
  • - 1 pinch ground cinnamon optional
  • - 1 pinch ground nutmeg optional
  • - 1 20-ounce can crushed pineapple with juice
  • - 5 slices white bread torn into pieces

Instructions
 

  • **Preheat & Prepare:**
  • - Preheat the oven to 350°F (175°C).
  • - Grease a medium-sized casserole dish.
  • **Cream Butter & Sugar:**
  • - In a large mixing bowl, beat sugar and softened butter until creamy.
  • **Incorporate Eggs & Spices:**
  • - Beat in eggs one at a time until fully incorporated.
  • - Stir in cinnamon and nutmeg (if using).
  • **Mix in Pineapple & Bread:**
  • - Add crushed pineapple with its juice and mix well.
  • - Fold in torn bread pieces until fully combined.
  • **Bake:**
  • - Pour the mixture into the prepared casserole dish.
  • - Bake for 1 hour or until bubbly and golden brown on top.
  • **Cool & Serve:**
  • - Allow to cool slightly before serving.
  • - Enjoy warm as a side dish or dessert!

Notes

- Add a buttery Ritz cracker topping for extra crunch.
- For a richer flavor, use brioche or Hawaiian sweet bread.
