Ingredients

  • 2 boneless, skinless chicken breasts, cubed
  • 1 cup (240 mL) teriyaki sauce
  • 2 teaspoons oil
  • ½ cup (75 g) diced onion
  • 1 tablespoon minced garlic
  • ½ cup (60 g) diced carrot
  • 1 cup (150 g) broccoli florets
  • 3 eggs, beaten
  • 3 cups (690 g) cooked brown rice
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Pepper to taste

Instructions

  1. Marinate Chicken: Place the cubed chicken breasts in a bowl and cover with teriyaki sauce. Let it marinate in the refrigerator for at least an hour to soak up the flavors.
  2. Cook Chicken: Heat a wok or deep skillet over high heat. Add the marinated chicken along with the teriyaki sauce and cook until the chicken is fully cooked. Remove from the pan and set aside.
  3. Sauté Vegetables: In the same pan, add oil and sauté the diced onions, minced garlic, and diced carrots until the onions become translucent.
  4. Add Broccoli: Toss in the broccoli florets and cook for an additional 3-4 minutes until they are tender yet crisp. Push all the vegetables to one side of the pan.
  5. Scramble Eggs: Pour the beaten eggs into the cleared half of the pan. Scramble them until cooked through, then mix with the vegetables.
  6. Combine Everything: Add the cooked brown rice, cooked chicken, soy sauce, sesame oil, and a dash of pepper. Stir everything together until well combined and the rice is slightly crispy.
