Blueberry Lemon Blondies are a quick and easy treat that are moist, sweet, and acidic. These blondies are made from scratch with a few easy ingredients including fresh blueberries, lemon juice, and zest.
Ingredients
Blondies with Blueberries and Lemon Juice:
1 cup flour (all-purpose)
a quarter teaspoon of baking powder
a quarter teaspoon of salt
½ cup unsalted unsalted butter (at room temperature)
sugar (¾ cup)
1 lemon’s zest, grated
1 big room-temperature egg
¼ cup lemon juice, freshly squeezed
1 cup blueberries, fresh
Glaze:
1 cup sifted powdered sugar
lemon juice, 2 tblsp.
1 heaping Tablespoon blueberries, frozen
Instructions
Preheat the oven to 350°F and line an 8-inch baking dish with parchment paper, allowing a generous overhang on the edges to easily remove the blondes.
Set aside a second bowl containing flour, baking powder, and salt.
2 minutes of softened butter, sugar, and lemon zest Mix in the egg until everything is well combined.
After that, stir in the lemon juice until everything is well combined. It won’t all fit together perfectly, but that’s fine.
Mix in the flour mixture until everything is fully mixed.
Finally, mix in the blueberries gently using a rubber spatula.
Spread the mixture evenly in the prepared dish and bake for 25-30 minutes, or until the sides are softly golden brown and the center is totally set.
Allow to cool to room temperature.
To prepare the glaze, combine the lemon juice and frozen blueberries in a food processor (use frozen blueberries to get intense purple color). Remove the pulp and strain the juice. 1 tbsp. powdered sugar, 1 tbsp. orange juice If necessary, add extra juice. It’s important that the glaze be spreadable but not too runny. If it’s too thin, add more powdered sugar; if it’s too thick, add more juice until desired consistency is achieved.
Before serving, spread over blondies and allow to solidify for about 10 minutes.
