These Fudgy Brownie Cookie Delights combine the rich chocolatey goodness of brownies with the ease and portability of cookies. Perfect for when you’re craving a chewy indulgent treat but don’t want to make an entire pan of brownies these cookies come together in just minutes using a simple boxed brownie mix. With a soft center and slightly crisp edges they’re a crowd-pleaser for any occasion. Customize them by mixing in your favorite add-ins like chocolate chunks pretzels or even a dash of sea salt for an irresistible sweet and salty twist.

Ingredients

2 boxes (19.8 ounces each) brownie mix
½ cup all-purpose flour
½ cup vegetable oil
4 large eggs
6 tablespoons water
2 cups dark chocolate chunks or chips

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it.
In a large mixing bowl combine the brownie mix flour vegetable oil eggs and water until the batter forms a thick dough. Fold in the dark chocolate chunks.
Using a tablespoon scoop out portions of dough and place them about 2 inches apart on the prepared baking sheet.
Bake for 8-10 minutes or until the cookies have just set and the edges appear slightly crisp.
Allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to a cooling rack to cool completely.
Creative Tip For a twist substitute dark chocolate chunks with white chocolate chips peanut butter chips or crushed pretzels for extra crunch. You can also try adding a sprinkle of sea salt right before baking for a sweet and salty combo.
