These mini Butterfinger bites are incredibly tasty! Made with a blend of peanut butter, graham cracker crumbs, and crushed Butterfinger candy, then coated in rich melted chocolate, they’re a dessert that’s sure to vanish quickly at any party or holiday celebration.

Ingredients:

1 cup smooth peanut butter (avoid all-natural varieties)
4 tablespoons softened butter (half a stick)
1 teaspoon pure vanilla extract
1 cup powdered sugar
¾ cup finely ground graham cracker crumbs
½ cup crushed Butterfinger candy bars
8 ounces chocolate chips or melting chocolate (bark or wafers)
Optional garnishes: extra crushed Butterfingers festive sprinkles or flaky sea salt

Instructions:

Prepare the Dough: In a mixing bowl combine the creamy peanut butter and softened butter. Beat them together on medium speed using a hand mixer or stand mixer with the paddle attachment until smooth and well-blended.

Incorporate Vanilla: Add the vanilla extract and mix until fully combined.

Add Sugar and Crumbs: Gradually mix in the powdered sugar in portions blending on low speed to avoid a mess. Be sure to pause and scrape down the sides as needed. Once the sugar is incorporated gently fold in the graham cracker crumbs and crushed Butterfinger candy.

Shape the Balls: Line a large baking sheet with parchment paper. Scoop out small portions of the dough (about 1 to 1½ tablespoons per piece) and roll into smooth balls using your hands. Place the balls onto the prepared baking sheet.

Freeze the Dough: Transfer the baking sheet to the freezer and let the balls chill for around 30 minutes or until firm.

Melt the Chocolate: While the peanut butter balls are chilling melt your chocolate in a microwave-safe bowl. Heat the chocolate in 30-second bursts at 50% power stirring between each interval until smooth. Stop heating when a few small chunks remain then stir until fully melted. This prevents overheating.

Coat the Balls: Once the balls are firm dip them into the melted chocolate. You can fully coat each ball or leave a bit of the peanut butter mixture visible for a two-tone look.

Add Garnishes: Before the chocolate hardens sprinkle the tops with extra crushed Butterfingers sprinkles or a pinch of flaky sea salt for added texture and flavor.

Set and Enjoy: Allow the chocolate to set completely at room temperature or in the fridge before serving.

Storage:
Keep the peanut butter chocolate balls in an airtight container in the fridge for up to one week.

Tips:

Use classic peanut butter brands like Jif or Skippy for best results. Avoid natural peanut butters as their higher oil content can affect texture.
Chocolate bark melts smoothly and is less finicky than regular chocolate. If you prefer you can mix bark with chocolate chips for a balanced taste.
For a more controlled melting process consider using a double boiler to melt the chocolate over gentle heat.
