Ingredients:
1 small head of green cabbage, coarsely chopped
1 medium Vidalia onion, chopped
8 tbsp unsalted butter
Salt and pepper, to taste
1 (10-oz) can condensed cream of chicken or cream of mushroom soup
1/3 cup mayonnaise
1 cup shredded sharp cheddar cheese
1 sleeve Ritz crackers (about 30), coarsely crushed
Instructions:
Preheat the oven to 350°F. Grease a 2-quart casserole dish.
In a large nonstick pan, melt the butter over medium heat. Add the chopped cabbage and onion and cook for 8 to 10 minutes, stirring frequently, until partially cooked down. Season with salt and pepper to taste.
Transfer the cabbage mixture to the prepared casserole dish.
In a small bowl, stir together the condensed soup and mayonnaise. Spread the mixture over the cabbage.
In another bowl, combine the melted butter, shredded cheese, and cracker crumbs. Sprinkle the mixture over the casserole.
Bake for 30 minutes or until the topping is browned. Serve hot.
