What exactly are TAQUITOS?
A Mexican meal made by rolling a tiny tortilla around a meat and cheese mixture and deep-frying it.
These Cream Cheese and Chicken Taquitos are loaded with cream cheese, salsa, cheese, sour cream, and spinach and are sure to please.
Ingredients:
3 cups cooked and shredded chicken
6 ounces softened cream cheese
a third of a cup of sour cream
1 1/2 cups colby jack cheese 1/2 cup salsa
1 1/2 cups chopped baby spinach, stems removed
12 6 inch maize tortillas, fried in vegetable or canola oil
Instructions:
In a sauce pan over medium heat, heat ½ ” oil.
Combine the chicken, cream cheese, sour cream, salsa, co-jack, and spinach in a large mixing basin. Season to taste with salt and pepper.
Put a few teaspoons of the chicken/cream cheese mixture in the center of a tortilla and spread out after the oil is hot enough (place palm over pan, above oil, to feel heat). Using tongs, roll up and place seam side down in oil. Cook until both sides are golden brown.
Repeat with the remaining tortillas until they are all filled, rolled, and cooked.
To drain, place on paper towels.
