The excess fluids in this easy dish soak up the vanilla instant pudding mix, resulting in a delightful and fulfilling dessert when paired with whipped topping (Cool Whip). I had no idea how good canned pineapple desserts could be until I tried this recipe. All of these tastes complement each other so wonderfully, plus you don’t have to deal with the hassle of cutting up a fresh pineapple.
This was served in little parfait cups, which are lovely for a quick sweet treat now and again. Yum! For a little more flair, top with whipped cream and a cherry.
Ingredients
1 can (20 oz.) undrained crushed pineapple in juice
Vanilla Flavor Instant Pudding, 1 pkg. (3.4 oz.)
1 cup Whipped Topping, thawed
Instructions
Combine the pineapple and the dry pudding mix in a mixing bowl. In a small mixing bowl, gently fold in the whipped topping. Before serving, chill for one hour.
