I’ve cracked the code on my 85-year-old mom’s cherished childhood treat, which she fondly refers to as “Ice Cream Cookies.” These delightful cookies stand apart from the typical crispy wafers, as they retain a wonderfully soft texture. Even better, they’re crafted from everyday pantry staples—no need for exotic ingredients like potato flour. Here’s the revamped recipe:

Ingredients:

1/2 cup of butter
1/2 cup of white sugar
1 egg
2 teaspoons of vanilla extract
1 tablespoon of milk (a crucial ingredient, as per Mom’s recollection)
3/4 cup of all-purpose flour

Instructions:

Begin by preheating your oven to 350 degrees.

In a mixing bowl, cream together the following ingredients:

1/2 cup of butter
1/2 cup of white sugar
Once the butter and sugar are thoroughly combined, beat in the following ingredients:

1 egg
2 teaspoons of vanilla extract
1 tablespoon of milk (as Mom emphasized, this is the secret ingredient!)
Gradually add 3/4 cup of all-purpose flour to the mixture, stirring until just combined.

Using a teaspoon, drop portions of the cookie dough onto a cold cookie sheet. Make sure to leave adequate spacing between each portion.
