Mandarin Orange Pineapple Cake

This recipe is a delightful twist on a classic butter cake. With the addition of mandarin oranges, the cake becomes moist and bursting with citrus flavor. The combination of the Duncan Hines Butter Cake mix, Wesson oil, and eggs creates a tender and fluffy texture. The icing, made with Cool Whip, instant vanilla pudding, and crushed pineapple, adds a creamy and fruity touch to the cake. Ingredients

1 box Duncan Hines Butter Cake mix
1/2 cup Wesson oil
1 11-ounce can mandarin oranges (with juice)
1/2 cup sugar
4 eggs

Icing:

1 12-ounce tub of Cool Whip
1 small instant vanilla pudding mix
1 16 oz. can crushed pineapple (juice drained and reserved)

Instructions

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour three cake pans, and line them with wax paper.
In a mixing bowl, combine the butter cake mix, Wesson oil, mandarin oranges (with juice), sugar, and eggs.
Mix the ingredients at medium speed for 2 minutes until well combined.
Pour the batter evenly into the prepared cake pans.
Bake at 350 degrees Fahrenheit for approximately 20 minutes or until the center of the cake bounces back when touched.
Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer them to cooling racks to cool completely.

Icing:

In a separate bowl, combine the drained crushed pineapple with the instant vanilla pudding mix.
Stir in the Cool Whip until well blended. If the icing appears too thick, you can use some of the reserved pineapple juice to thin it out.
Frost the cooled cakes with the pineapple-Cool Whip icing, spreading it evenly between the layers and on the top and sides of the cake.
Store the cake in the refrigerator. It is recommended to let it sit overnight, as it tends to taste better the next day.
