Mexican Pizza is a handmade replica of Taco Bell’s renowned Mexican Pizza, but it’s much better! It’s a quick and easy supper that the whole family will enjoy.
Ingredients:
1 pound beef mince
1 taco seasoning packet
3/4 cup of water
1 refried bean can (15 oz)
1 enchilada sauce can (10 oz)
1/4 cup tomatoes, diced
1 1/2 cup Colby Jack cheese, shredded
8 taco-sized flour tortillas
1 tablespoon of vegetable oil
Instructions:
Preheat the oven to 400 degrees Fahrenheit.
Brown the ground beef in a large pan, dividing it up into tiny bits. Add taco seasoning and water once the meat is done cooking. Bring to a boil, then lower to a low heat and continue to cook until most of the liquid has been absorbed.
Half of the oil should be poured onto a big skillet or griddle. Heat on a medium-high heat setting. Cook for 4-5 minutes, rotating regularly, until tortillas are crisp. Using the remaining tortillas and oil, repeat the process.
Cover the bottom of each tortilla with roughly 1/4 cup of beans. Taco meat should be on top.
Another tortilla should be placed on top of the meat. 2 tblsp enchilada sauce, spread equally over the tortilla Tomatoes should be equally distributed across the tops of the tortillas.
Over the top, sprinkle the cheese in a uniform layer.
Bake for 8-10 minutes, until the cheese is melted and everything is heated.
Cut into slices and serve.
