Easy lunch ideas are hard to come by. Crunchy Southwestern Chicken Wrap is one of them. These chicken wraps come together in minutes, can be made ahead of time, and are especially wonderful thanks to the creamy spicy sauce!
Ingredients:
Sauce
a third of a cup of sour cream
3/4 c salsa
taco seasoning (1 1/2 tblsp)
Wraps
4 tortillas (big) (wrap size)
1 1/3 cup lettuce, shredded
1/2 cup chopped tomato
1 avocado (whole, diced)
1/2 cup shredded cheddar cheese
2 cup shredded cooked chicken
1 cup shredded Fritos
Instructions:
Toss together the sour cream, salsa, and taco seasoning in a mixing bowl until thoroughly combined.
On a cutting board, lay a tortilla flat. 1 heaping tablespoon sauce, spread over the bottom half of the tortilla, leaving a 1 inch border on either side
Over the sauce, scatter 1/3 cup lettuce, 2 tablespoons tomato, ¼ avocado, 2 tablespoons cheese, and ½ cup chicken. ¼ cup Fritos crushed over the chicken 1 tblsp sauce drizzled over the top
Roll firmly with the sides folded in. Carry on with the remaining wraps in the same manner. To serve, cut in half.
