This Strawberry Pina Colada is a delightful, quick, and enjoyable go-to cocktail made with white rum, frozen strawberries, pineapple, pineapple juice, and cream of coconut.
Ingredients:
For the strawberry layer:
1 cup sliced frozen strawberries
1 oz. rum blanc
½ C pineapple juice
For the pineapple coconut layer:
1 cup pineapple chunks, frozen
1 oz. rum blanc
a quarter cup of pineapple juice
¼ cup coconut cream
garnish with pineapple wedges
Garnish with fresh strawberries
Instructions:
To make the strawberry layer, combine the strawberries, rum, and pineapple juice in a blender and puree until smooth.
Fill the bottoms of two glasses with it. Remove everything from the blender.
In a blender, combine the pineapple chunks, rum, pineapple juice, and coconut cream until smooth. Pour or spoon the pineapple coconut layer on top of the strawberry layer in each glasses.
If desired, garnish with pineapples and strawberries.
