Apple Cranberry Coleslaw is a great way to add some variety to your fall menu! This coleslaw is crisp, sweet, and wonderful, with fresh apples, dried cranberries, chopped walnuts, and green onions.
Ingredients:
1 bag of 3-color coleslaw mix (14 oz.)
1 big chopped apple
a half cup of dried cranberries
1/2 cup walnuts, chopped
4 sliced green onions
Dressing:
3/4 cup mayonnaise (lowfat)
3/4 cup plain yogurt (not Greek yogurt)
honey, 6 tbsp
1 tsp. ginger powder (dry)
Instructions:
In a large mixing basin, combine all of the ingredients for the coleslaw.
Combine the dressing ingredients in a small bowl and stir well.
Pour the dressing over the coleslaw and toss to coat evenly.
Use 1/2 cup mayo, 1/2 cup plain yogurt, 1/4 cup honey, and 1/2 teaspoon ginger for a less creamy coleslaw.
