There are just four ingredients in these simple Almond Joy Cookies, and they don’t even require a mixer! There’s no need to beat them or cool them; mix them up and pop them in the oven. These ooey-gooey beautiful cookies are sure to please!


1 bag of sweetened coconut flakes (14 oz)
2 cups chocolate chips (semi-sweet)
2/3 cup gently salted almonds, chopped Blue Diamond Low Sodium Lightly Salted (light blue bag) was utilized.
1 14 oz can sweeten condensed milk (fat-free or regular)


Preheat the oven to 325 degrees Fahrenheit.
Set aside a large baking sheet lined with parchment paper.
Combine the coconut, chocolate chips, almonds, and sweetened condensed milk in a large mixing basin.
Stir until everything is well blended.
Spoon out the dough onto the prepared baking sheet using a cookie scoop.
Shape into discs by moistening the tips of your fingers with water. Flatten the tops.
Bake for 12 to 14 minutes, or until the tops of the coconut begins to turn golden brown.
Allow cooling completely on the baking pan.
Cookies should be kept in an airtight container.
