Bacon Cheddar Potato Cakes

This dish, y’all, is yum yum yum yum yum yum yum yum y This meal, which included baby potatoes, spices, bacon, and melted cheddar, was AMAZING! It was a massive hit with my entire family! Because there is no boiling required, it was really simple to put together!
These Bacon Cheddar Potatoes are seasoned to perfection and topped with shredded cheddar cheese and crispy bacon.


3 bacon slices

4 cups leftover mashed potatoes (cold)

two eggs

1 teaspoon powdered onion

a half teaspoon of salt

1/2 teaspoon black pepper, ground

1 cup shredded cheddar cheese


Cook the bacon in a large, deep pan over medium-high heat, rotating periodically, for approximately 10 minutes, or until uniformly browned and crisp. Remove the bacon pieces from the pan, crumble them, and put them aside. The bacon drippings should be left in the pan.
In a large mixing basin, combine the mashed potatoes, eggs, onion powder, salt, and black pepper; whisk in the crumbled bacon and Cheddar cheese.
Make 8 patties out of the mixture. Cook the patties in the bacon drippings until crisp on both sides, about 4 minutes on each side, over medium heat.
