- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese (two 8 oz packages), softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 42 oz cherry pie filling (two 21 oz cans)
Instructions
- Preheat the oven to 325°F.
- In a bowl, combine the graham cracker crumbs and melted butter until well mixed.
- Press the crumb mixture evenly into the bottom of a greased 9×13 inch baking dish.
- In another bowl, beat the cream cheese and sugar together until smooth.
- Add the eggs and vanilla extract to the cream cheese mixture, and beat until fully incorporated.
- Pour the cream cheese mixture over the graham cracker crust in the baking dish.
- Bake for 45-50 minutes, or until the cheesecake is set and the edges are lightly browned.
- Allow the cheesecake to cool in the pan for 10-15 minutes.
- Spread the cherry pie filling evenly over the top of the cheesecake.
- Chill the cheesecake in the refrigerator for at least 2 hours, or until fully set.
- Once set, slice the cheesecake and serve.

- For a thicker cheesecake, use an 8×8 inch baking dish and one can of cherry pie filling, following the same instructions.
