Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese (two 8 oz packages), softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 42 oz cherry pie filling (two 21 oz cans)

Instructions

  1. Preheat the oven to 325°F.
  2. In a bowl, combine the graham cracker crumbs and melted butter until well mixed.
  3. Press the crumb mixture evenly into the bottom of a greased 9×13 inch baking dish.
  4. In another bowl, beat the cream cheese and sugar together until smooth.
  5. Add the eggs and vanilla extract to the cream cheese mixture, and beat until fully incorporated.
  6. Pour the cream cheese mixture over the graham cracker crust in the baking dish.
  7. Bake for 45-50 minutes, or until the cheesecake is set and the edges are lightly browned.
  8. Allow the cheesecake to cool in the pan for 10-15 minutes.
  9. Spread the cherry pie filling evenly over the top of the cheesecake.
  10. Chill the cheesecake in the refrigerator for at least 2 hours, or until fully set.
  11. Once set, slice the cheesecake and serve.

Notes

  • For a thicker cheesecake, use an 8×8 inch baking dish and one can of cherry pie filling, following the same instructions.
  • Let the cheesecake cool in the pan for at least 15 minutes before adding the cherry topping.
  • Once topped with cherries, refrigerate for at least 3 hours to set.
  • You can use any type of pie filling or even drizzle chocolate sauce over the cheesecake for variation.
