INGREDIENTS:

  • 4 large russet potatoes
  • 1 medium onion
  • 2 eggs
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Vegetable oil for frying

INSTRUCTIONS:

  1. Peel and cube the russet potatoes and onion. Place them in a food processor and process for approximately 2 minutes until the mixture is finely grated. Alternatively, you can use a grater to peel and grate the potatoes and onion.
  2. Transfer the grated potato and onion mixture to a fine strainer or kitchen towel. Squeeze out most of the liquid into a mixing bowl.
  3. Discard the liquid, but retain the white powder or potato starch at the bottom of the bowl after pouring out the liquid.
  4. Return the potato mixture to the bowl and add eggs, flour, salt, and pepper. Mix until well incorporated.
  5. In a large non-stick skillet, heat vegetable oil over medium heat. Once hot, spoon the potato mixture into the skillet, spreading it slightly. Fry the pancakes for about 2 to 3 minutes on each side until they are golden brown and crispy.
  6. Transfer the cooked pancakes to a paper towel to drain any excess grease.
