Ingredients:

For the chicken:

  • 4 thin boneless, skinless chicken breasts (or 2 thick ones, halved horizontally)
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 teaspoons Italian seasoning
  • 2 tablespoons olive oil

For the pasta:

  • 12 oz spaghetti

For the White Wine Parmesan Sauce:

  • 4 tablespoons butter
  • 1 small yellow onion, chopped (or ½ onion)
  • 4 garlic cloves, minced
  • 2 scallions, chopped
  • 2 small tomatoes, diced
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • 1 cup white wine
  • ½ cup Parmesan cheese, shredded
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon crushed red pepper flakes

Instructions:

  1. Prepare the chicken breasts by ensuring they are thin. If needed, halve thick chicken breasts horizontally. Pat the chicken dry with paper towels.
  2. In a large bowl, mix together the flour, salt, black pepper, garlic powder, and Italian seasoning. Coat the chicken breasts in this flour mixture, pressing them into the mixture with tongs until fully coated. Set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Once hot, add the flour-coated chicken breasts to the skillet. Cook for 4 to 5 minutes on each side until golden brown and cooked through, about 8-10 minutes in total. Remove the chicken from the skillet and set aside.
  4. For the sauce, add butter, chopped onion, and minced garlic to the skillet. Cook over medium-high heat until the onions and garlic are translucent, approximately 2 minutes. Add chopped scallions and diced tomatoes. Sprinkle flour over the mixture and whisk to combine.
  5. Pour in heavy cream, white wine, Italian seasoning, salt, and crushed red pepper flakes. Bring the mixture to a simmer, then add shredded Parmesan cheese. Stir until the cheese is fully melted and the sauce is smooth.
  6. Cook the pasta according to package instructions in salted water until al dente. Drain the pasta, but do not rinse.
  7. Add the cooked pasta to the skillet with the sauce and stir to combine over low heat for 2-4 minutes. Taste and adjust seasoning with salt if necessary.
  8. Return the cooked chicken to the skillet on top of the pasta and allow it to warm up for an additional 5 minutes.
  9. Serve the chicken either on top or alongside the pasta. Optionally, sprinkle with additional Parmesan cheese before serving. Enjoy your Italian Chicken Pasta!
