Ingredients:

2 cups all-purpose flour
2 sticks (1 cup) unsalted butter, softened
2 packages (3 ounces each) cream cheese, softened
Pastry filling of your choice (such as fruit preserves or pie filling)
Powdered sugar, for dusting

Instructions:

Allow the butter and cream cheese to come to room temperature. Once softened, combine them in a mixing bowl and blend together until well combined.

Slowly add the flour to the butter and cream cheese mixture. The dough will become thick, so it’s best to switch to using your hands to mix until all the ingredients are fully incorporated.

Once mixed, transfer the dough to the refrigerator and let it chill for at least one hour. Chilling the dough will make it easier to handle and roll out.

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

On a lightly floured surface, roll out the chilled dough to approximately 1/8-inch thickness.

Cut the rolled-out dough into 2-inch squares using a sharp knife or a pastry cutter.

Place a small amount of your chosen pastry filling diagonally on each square.

Fold over the other two corners of the square, forming a triangle and enclosing the filling.

Arrange the filled Kolacky on a baking sheet lined with parchment paper, leaving a bit of space between each cookie.

Bake in the preheated oven for 18-20 minutes, or until the bottom of the cookies turns golden brown.

Once baked, remove the Kolacky from the oven and allow them to cool completely on a wire rack.

Once cooled, dust the Kolacky with powdered sugar for a finishing touch.
