Ingredients:

  • 6 Chicken Thighs
  • Your preferred amount of the following seasonings:
    • Onion powder
    • Garlic powder
    • Cajun seasoning
    • Pepper
    • Paprika
    • Italian herbs
    • Olive oil

For the Sauce:

  • 2 tbsp Butter
  • 2 tbsp Fresh minced Garlic
  • 1/2 cup Chicken broth
  • 1/3 cup Heavy whipping cream
  • Sun-dried Tomatoes
  • 1 tbsp White cooking wine
  • 1/2 cup Fresh Shredded Parmesan or Italian cheese
  • Salt and Pepper to taste
  • Italian herbs

Serving:

  • Mashed Potatoes

Instructions:

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Season the chicken thighs with onion powder, garlic powder, Cajun seasoning, pepper, paprika, and Italian herbs to your liking.
  3. Heat olive oil in a skillet over medium-high heat. Pan-sear the seasoned chicken thighs on both sides until they achieve a golden-brown color. Once done, transfer the chicken thighs to a separate oven-safe baking pan.
  4. In the same skillet, melt the butter and add the minced garlic. Cook for about 3 minutes or until the garlic becomes fragrant.
  5. Pour in the chicken broth, add sun-dried tomatoes, and heavy whipping cream to the skillet. Add a pinch of salt, pepper, and Italian herbs. Allow the sauce to simmer for a few minutes, letting the flavors blend together.
  6. Stir in the shredded Parmesan or Italian cheese into the sauce until it melts and becomes creamy.
  7. Pour the creamy garlic Parmesan sauce over the pan-seared chicken thighs in the baking pan.
  8. Place the baking pan in the preheated oven and bake for 30-35 minutes or until the chicken is cooked through and the sauce is bubbly and slightly browned.
  9. While the chicken is baking, prepare some creamy mashed potatoes to serve as a delicious accompaniment.
  10. Once the chicken is done baking, remove it from the oven and let it rest for a few minutes.
