Mexican Tortilla Casserole

INGREDIENTS

1 pound beef mince
taco seasoning (2 tbsp.)
chilli beans, 1 can
1 Rotel can
1 tomato can (crushed) 15 ounces
12 to 16 corn tortillas, quartered
1 cup sour cream
2 cups cheddar cheese, shredded

INSTRUCTIONS

In a large skillet, brown the meat. Drain.

In a pan, combine taco seasoning, beans, diced tomatoes, and smashed tomato.

Spray a 13×9 casserole dish with cooking spray. On the bottom, arrange a layer of tortillas.

Half of the meat mixture should be poured over the tortillas. Half of the tortillas are spread on top, and half of the cheese is sprinkled. On top of it, add another layer of tortillas. Pour the remaining meat mixture over the tortillas, dollop over the sour cream and top with the remaining cheese.

Bake for 20 minutes at 350°F, or until the cheese is lovely and bubbling.

Serve with a salad and tortilla chips. Enjoy!
