Ingredients:

Brownies

  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup dark chocolate cocoa powder (or regular unsweetened cocoa powder)
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1 cup dark chocolate or semi-sweet chocolate chips

Coconut Topping

  • 2 1/2 cups sweetened shredded coconut flakes
  • 1 can (12 oz) sweetened condensed milk
  • 1 1/2 cups dark or semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F and line an 8″ x 8″ baking pan with parchment paper or foil, sprayed with cooking spray. Set it aside.
  2. In a microwave-safe dish, melt the butter. Add sugar, eggs, and vanilla extract, stirring until smooth. Then, add flour, cocoa powder, salt, and baking powder, mixing until well-combined. Gently fold in the chocolate chips.
  3. Spread the batter evenly in the prepared baking pan. Bake for about 23 minutes; the brownies will be slightly underdone as they will return to the oven later.
  4. While the brownies are baking, combine coconut flakes and sweetened condensed milk in a bowl. Once the brownies are done, immediately spread the coconut mixture on top using a rubber spatula. Sprinkle chocolate chips over the coconut mixture and return the pan to the oven for an additional 5 minutes.
  5. Remove the pan from the oven again, and use a rubber spatula to spread the melted chocolate over the top of the brownies. Allow the brownies to cool at room temperature for at least 2 hours or place the pan in the fridge for about 30 minutes until the chocolate hardens.
  6. Once cooled and set, cut the brownies into squares, serve, and savor the deliciousness!
