Are you looking for a simple Summer dessert recipe? Try this wonderful Summer Berry Icebox Cake that requires no baking!
Ingredients:
graham crackers, 19 ounces
8 ounces softened cream cheese
2 (3.4 oz) Vanilla Instant Pudding packets
2-1/2 quarts chilled milk
Cool whip 12 ounces (or homemade whipped cream)
3 cups sliced fresh strawberries
1 1/2 cup blueberries, fresh
white chocolate chips, 2 ounce
Instructions:
In a large mixing bowl, beat cream cheese and dry pudding mixes until smooth.
Gradually add the milk.
12 cup Cool Whip or handmade whipped cream, gently stirred in
In a 9×13 pan, cover the bottom with a thin layer of cool whip.
5 graham crackers in the middle of the pan, followed by 2 more, breaking as required to fit around the top and bottom corners.
Cover grahams with a layer of pudding mixture and a layer of blueberries and cut strawberries.
On top of the berries, stack graham crackers, pudding mixture, then berries again.
Repeat the graham-pudding-berries layers one more time (3 times total) until the pan is full.
Refrigerate for at least 4 hours or overnight, until graham crackers are totally soft.
Melt white chocolate chips in a bowl according to package directions and pour over dessert when ready to serve.
You may sprinkle it over the berries with a spoon or put it in a tiny zip-top bag and cut the corner off for an easy “piping bag.”
