Ingredients:

1 cup (2 sticks) of butter
1/4 cup of granulated sugar
1/8 cup of packed brown sugar
1 teaspoon of vanilla extract
2 cups of all-purpose flour
2 cups of finely ground pecans
Powdered sugar for rolling

Instructions:

Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
In a mixing bowl, cream together the butter, granulated sugar, and packed brown sugar until fluffy.
Stir in the vanilla extract and mix well.
Gradually add the flour and ground pecans to the mixture. The batter will appear separated and crumbly, which is the desired texture.
Shape the dough into small balls and place them on an ungreased cookie sheet.
Bake in the preheated oven for 10-13 minutes, or until the cookies are lightly browned.
Allow the cookies to cool, then roll them in powdered sugar just before serving. (Note: Ensure the cookies are cooled to avoid melting the powdered sugar.)
Enjoy your delicious pecan cookies!
