Ingredients:

3 pounds red potatoes, peeled and halved

5 garlic cloves, minced 2 tablespoons olive oil

1 teaspoon thyme, dry

1/2 teaspoon oregano, dry

1/2 teaspoon basil leaves, dried

1/3 cup Parmesan cheese, grated

To taste, kosher salt and freshly ground black pepper

2 tbsp butter (unsalted)

2 tbsp parsley leaves, chopped

Skinny Garlic Parmesan Roasted Potatoes Recipe:

Preheat the oven to 400 degrees Fahrenheit. Coat a baking sheet with nonstick spray or lightly oil it.

Step 2: Arrange the potatoes in a single layer on the baking sheet that has been prepared. Season with salt and pepper to taste after adding the olive oil, garlic, thyme, oregano, basil, and Parmesan. Toss gently to blend.

Step 3. Bake for 25-30 minutes, or until golden brown and crisp, in the oven. 1 minute after adding the butter, stir until it has melted.

Step 4. Garnish with parsley, if preferred, and serve immediately.
