Mom’s Carrot Cake

This is my favorite homemade carrot cake recipe! This cake is really simple to make, delicious, and topped with a simple cream cheese icing.

Ingredients:

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon salt
1 ½ cups granulated sugar
½ cup vegetable oil
4 large eggs
2 teaspoons pure vanilla extract
2 cups finely grated carrots

Instructions:

Preheat the oven to 350°F. Grease and flour a 9-inch round baking pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a large bowl, beat together the sugar, vegetable oil, eggs, and vanilla until light and fluffy.
Add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the carrots.
Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 15 minutes before turning out onto a wire rack to cool completely. Serve with cream cheese frosting if desired. Enjoy!
