ZUCCHINI GRATIN WITH YELLOW SQUASH

Instructions:

  1. Preheat your oven to 450 degrees Fahrenheit (230 degrees Celsius).
  2. In an oven-proof skillet, melt the butter over medium heat. Add the sliced onion and cook until the edges start to brown, which should take around 5 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  4. Pour in the heavy cream and simmer until it becomes bubbly and starts to thicken.
  5. Slowly stir in the grated Parmesan cheese until well combined.
  6. Add the sliced zucchini and yellow squash to the skillet and cook for an additional 4-5 minutes, allowing them to soften slightly.
  7. Sprinkle the shredded smoked Gouda cheese over the top of the mixture in the skillet.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is golden brown and bubbly.

Notes:

  • If using larger zucchinis, consider doubling the amount of cream and Parmesan cheese to accommodate for their size and potentially tougher texture.
  • Larger zucchinis may require additional simmering and/or baking time to ensure they are cooked through. Adjust cooking times accordingly.
