Instructions:
- Preheat your oven to 450 degrees Fahrenheit (230 degrees Celsius).
- In an oven-proof skillet, melt the butter over medium heat. Add the sliced onion and cook until the edges start to brown, which should take around 5 minutes.
- Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
- Pour in the heavy cream and simmer until it becomes bubbly and starts to thicken.
- Slowly stir in the grated Parmesan cheese until well combined.
- Add the sliced zucchini and yellow squash to the skillet and cook for an additional 4-5 minutes, allowing them to soften slightly.
- Sprinkle the shredded smoked Gouda cheese over the top of the mixture in the skillet.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is golden brown and bubbly.
Notes:
- If using larger zucchinis, consider doubling the amount of cream and Parmesan cheese to accommodate for their size and potentially tougher texture.
- Larger zucchinis may require additional simmering and/or baking time to ensure they are cooked through. Adjust cooking times accordingly.
