Cheese Shrimp Penne Pasta & Spinach! This recipe combines the irresistible flavors of tender shrimp, al dente penne pasta, fresh chopped spinach, and gooey melted cheese. It’s a mouthwatering combination that will satisfy your cravings and impress your taste buds.

Ingredients:

1 box Penne Pasta
1 lb Shrimp, peeled and deveined
3 cups Fresh Chopped Spinach, Kale, or Arugula (do not use frozen)
1 cup Mozzarella or Swiss Cheese
3 cloves Garlic, minced
2 teaspoons Salt
2 teaspoons Pepper
2 teaspoons Garlic Salt
8 cups Water
2 tablespoons Butter
1 tablespoon Oil
Dried cilantro for garnish

Directions:

Cook the penne pasta according to the package instructions. In the last 5 minutes of cooking, add the shrimp to the pasta water. Cook until the shrimp are no longer pink. Drain all but 1 cup of the water for the next step. Keep the pasta and shrimp warm.
In a pan, heat the oil and butter over medium heat. Once the butter has melted, add the cooked pasta to the pan. Toss to coat the pasta with the oil and butter. Season with salt, pepper, and garlic salt. Cook for 2 minutes, stirring often.
Add the chopped spinach to the pan and cook for 1 minute until wilted. If needed, add an additional 1/3 cup of water to steam and cook the spinach. Finally, add the cooked shrimp and cheese. Gently stir until the cheese melts. Be careful not to overcook. Adjust the seasonings to taste.
Garnish the dish with dried cilantro.
