Apple Pie Enchiladas

Our closest relatives will be arriving next week – my husband’s and my parents, as well as my sisters – since we are planning a party for our little son Christopher.

We should prepare something delicious, but my mother’s responsibilities don’t provide me with much time, and what should I make?

Apple Desserts are becoming more popular as the fall season approaches. However, because arriving visitors are prone to harsh criticism, they say: Ooooh, no! Isn’t it time for another apple cake? Anyway, I’m going to cook that apple cake!

Ingredients:

  • 1 (21 ounce) can apple pie filling
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1 teaspoon vanilla
  • 6 (8 inch) flour tortillas

Directions:

  1. Preheat the oven to 350 degrees F. Grease a 9×13 inch baking dish.
  2. Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon and roll up, tucking in edges; and place seam side down in prepared dish.
  3. In a medium saucepan over medium heat, combine butter, white sugar, brown sugar, and water. Stir until the butter has melted and the sugars have dissolved. Bring the mixture to a boil, stirring constantly. Reduce the heat and let it simmer for 3 minutes. Remove from heat and stir in 1 teaspoon vanilla.
  4. Pour the sauce over the enchiladas and let it stand for 45 minutes. This resting time helps to magically transform the flour tortillas into a faux pastry dough.
  5. Bake the enchiladas in the preheated oven for 30 minutes or until golden. Serve warm.
