Ingredients:

4 medium-sized sweet potatoes
1 can (14 ounces) sweetened condensed milk
1 cup light brown sugar
1/3 cup white sugar
1/4 cup honey
1 stick (1/2 cup) unsalted butter
2 eggs, beaten
1 tablespoon vanilla extract
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/4 teaspoon salt
2 frozen pie shells

Instructions:

Preheat the oven to 375°F (190°C).

Bake the sweet potatoes until tender, which usually takes about 45 minutes to an hour. Once cooked, allow them to cool slightly before handling.

In a large mixing bowl, combine the sweetened condensed milk, beaten eggs, vanilla extract, melted butter, and honey. Stir until well combined.

Add the light brown sugar, white sugar, salt, nutmeg, cinnamon, and allspice to the bowl. Mix everything together thoroughly.

Peel the sweet potatoes and add them one at a time to the mixture. Using a mixer on low speed, blend the ingredients until smooth. Mix for several minutes to ensure a consistent texture.

Preheat the oven to 350°F (175°C).

Using a fork, poke the bottom of the frozen pie shells to prevent puffing. Place the shells in the preheated oven for 8-10 minutes.

Remove the pie shells from the oven and pour the sweet potato filling into each shell.

Bake the pies for approximately 60 minutes or until they are firm.

Once baked, remove the pies from the oven and let them cool before serving. Enjoy your delicious sweet potato pies!

Note: The baking temperatures and times provided are general guidelines, so please monitor the pies while they bake and adjust as needed based on your oven’s behavior.
