Ingredients

  • 5 medium carrots, chopped
  • 3 large onions, chopped
  • 2 (16-ounce) cans whole peeled tomatoes, with their juice
  • 1 large head of cabbage, chopped
  • 1 (1-ounce) packet dry onion soup mix
  • 1 (15-ounce) can cut green beans, drained
  • 2 quarts tomato juice
  • 2 green bell peppers, diced
  • 10 celery stalks, chopped
  • 1 (14-ounce) can beef broth

Directions

  1. In a large stockpot, combine the chopped carrots, onions, whole peeled tomatoes (with their liquid), chopped cabbage, drained green beans, diced bell peppers, and chopped celery.
  2. Add the dry onion soup mix, tomato juice, and beef broth to the pot. Pour in enough water to cover the vegetables.
  3. Bring the mixture to a simmer over medium heat. Cook until all the vegetables are tender, stirring occasionally.
  4. Once the vegetables are tender, remove the pot from heat. Allow the soup to cool slightly before serving.
  5. Store any leftovers in an airtight container in the refrigerator for up to several days.
