Chicken Broccoli Cheddar Pasta is a delicious and comforting dish that combines the flavors of tender chicken, vibrant broccoli, creamy cheddar cheese, and perfectly cooked pasta. This hearty recipe not only satisfies your taste buds but also offers a balanced combination of protein, vegetables, and carbohydrates.


1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into small bite-sized pieces
½ teaspoon salt, or to taste
½ teaspoon pepper, or to taste
1 medium onion, chopped
4 cloves garlic, minced
8 ounces uncooked pasta (penne, shells, rigatoni, etc.)
1 cup low-sodium chicken broth
2 cups milk
2 cups broccoli, cut into small florets (1 head of broccoli)
¼ teaspoon nutmeg
2 cups shredded cheddar cheese


Heat olive oil in a large skillet. Add chicken pieces, season with salt and pepper, and cook for approximately 5 minutes until chicken is cooked through and lightly browned.
Add chopped onions and minced garlic; cook for an additional 2 minutes until onions soften.
Stir in the uncooked pasta, chicken broth, and milk. Bring the mixture to a boil, then reduce heat to low, cover the pot/skillet, and simmer for 15 minutes. Stir occasionally to ensure even cooking of the pasta.
Uncover the pot and add the broccoli. Continue cooking for a few more minutes until the liquid evaporates.
Stir in nutmeg and shredded cheddar cheese. Taste for seasoning and adjust with salt and pepper if necessary.


Pasta Choices: Use your preferred pasta, such as penne, rigatoni, or shells, as they hold the sauce well.
Chicken Substitute: Experiment with turkey, shrimp, or tofu for a vegetarian option.
Cheese Options: Try other melting cheeses like Monterey Jack, mozzarella, or Gouda.
Leftovers: Store in the refrigerator for 3 to 5 days. To reheat, add a splash of milk or broth to restore creaminess.
