Crustless Coconut Pie

This Crustless Coconut Pie is a simple custard pie brimming with luscious coconut bits.


½  cup flour (all-purpose)

½  cup of sugar

12 tsp. kosher salt

2 quarts milk

4 eggs

2 tsp vanilla

2 cups sweetened shredded coconut


Preheat the oven to 350 degrees Fahrenheit. Set aside a pie pan that has been lightly greased.

In a mixing dish, combine the flour, sugar, and salt. Whisk everything together. Slowly pour in the milk and stir until smooth. Whisk in the eggs and vanilla extract until well combined. Add the coconut and mix well.

Fill the pie pan with the mixture. Preheat oven to 350°F and bake for 55-60 minutes, or until golden brown and a knife inserted in the center comes out clean.
