Ingredients:
2 quarts sugar
flour (two cups)
two eggs
1 teaspoon bicarbonate of soda
1 teaspoon vanilla extract
16 oz. pineapple, mashed but not drained
icing:
1 pound of butter
1 pound of sugar
a quarter-cup of evaporated milk
1 pound of coconut
1 pound of nuts
1 teaspoon vanilla extract
Directions:
Using a spoon, combine the first 6 ingredients in a mixing basin.
Fill a 13″ x 9″ cake pan halfway with batter.
35-40 minutes at 350°F.
To make the icing, combine the butter, sugar, and evaporated milk in a saucepan and simmer over medium heat until it thickens slightly. (This normally takes 6 minutes while the water is boiling.)
Take it off the fire and add the rest of the ingredients.
Pour the mixture over the hot cake.
