Ingredients:

3 cups all-purpose flour, unbleached
1.5 teaspoon salt
3 tablespoons fat
1 cup of hot water
¼ cup olive oil

Instructions:

Combine the flour with the salt and mix thoroughly. Crumble the lard into the flour mixture with your fingertips. 1 cup warm water, mix with a spoon as much as possible, then put onto a level surface and knead into a cohesive ball Allow for at least 30 minutes of resting time.
Tear into golfball-sized bits and roll between your palms to smooth them out.
Roll them out to about 5-6 inches in diameter with a rolling pin.
Heat a tortilla over a comal/griddle over medium-high heat.
Cook for 45-60 seconds on each side, or until light brown spots appear.
To speed up the process, roll out the next tortilla while the first is cooking.

Notes:

Allow the dough (or dough balls) to rest for a bit longer if the tortillas are springing back and not retaining their shape as you roll them out.
Getting the stove’s heat just right might take a few trials. If you’re acquiring black patches rapidly, your temperature is too high. If brown patches take too long to appear, your temperature is too low.
