  • 1 pound ground turkey or ground beef

  • 1 (8 ounce) can tomato sauce (or substitute with approximately 1/4 cup ketchup in the meat mixture and an additional 1/4 cup for topping)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Several shakes of Worcestershire sauce (about a teaspoon)
  • A mix of veggies (onions, mushrooms, zucchini, broccoli, carrots, spinach, lentils, etc.)

  2. In a bowl, combine ground meat, oatmeal, Parmesan cheese, egg, 1/4 cup of tomato sauce (or ketchup), garlic powder, salt, pepper, and Worcestershire sauce. Mix well.
  3. Add your choice of veggies to the mixture and combine thoroughly.
  4. Reserve the remaining tomato sauce or ketchup for topping the meatloaf muffins.
  5. Press the meat mixture into the muffin cups, aiming for eight to ten individual servings.
