  • 1 package (8 oz) softened cream cheese
  • 1 cup confectioners’ sugar
  • 1 cup drained, crushed pineapple
  • 1 tub (8 oz) whipped topping (e.g., Cool Whip)


  • ½ cup white sugar
  • ½ cup melted butter
  • 20 individual graham crackers, crushed (see Notes)


  • ¼ cup shredded coconut
  • ¼ cup drained, diced pineapple


  1. In a medium mixing bowl, beat the cream cheese with an electric mixer until it becomes slightly fluffy.
  2. Gradually add the confectioners’ sugar and continue mixing until fully incorporated.
  3. Blend in the whipped topping and continue beating until the mixture is fluffy.
  4. Gently fold in the crushed pineapple with a spatula, then set the mixture aside.
  5. In a separate small mixing bowl, combine the crushed graham crackers, white sugar, and melted butter until the mixture is well blended.
  6. Press the graham cracker mixture into the bottom of a 9×9-inch baking dish to form the crust.
  7. Spread the cream cheese filling evenly over the crust using a spatula.
  8. Sprinkle the shredded coconut and diced pineapple evenly over the top.
  9. Refrigerate for at least 2 hours, or until the dessert is firm.


  • The 20 graham crackers refer to 20 individual small rectangles (10 squares) that you would use for s’mores, or 5 large unbroken rectangle sheets from the package.
