Ingredients:

  • 2 sheets of refrigerated pie crust
  • 2 1/2 cups brown sugar
  • 1/2 cup melted butter + 1 tablespoon
  • 2 1/2 cups light corn syrup
  • 4 teaspoons vanilla extract
  • 6 lightly beaten eggs
  • 2 cups chopped pecans
  • 1 1/2 cups pecan halves

Instructions:

  1. Preheat your oven to 425°F (220°C). Grease a 9″ x 13″ casserole dish with non-stick spray.
  2. Roll out one pie crust into a rectangle and place it in the dish, ensuring it covers the bottom (it doesn’t need to reach the sides).
  3. In a large bowl, mix together brown sugar, melted butter, corn syrup, eggs, and vanilla extract until well combined.
  4. Stir in the chopped pecans until evenly distributed.
  5. Pour half of the mixture over the prepared pie crust.
  6. Roll out the second pie crust and place it on top of the pecan mixture.
  7. Brush or spoon the tablespoon of melted butter over the crust.
  8. Bake for about 15 minutes or until the crust turns golden brown.
  9. Reduce the oven temperature to 350°F (175°C).
  10. Stir the remaining pecan pie mixture and pour it over the cooked crust.
  11. Arrange the pecan halves on top of the cobbler.
  12. Bake again for 30 minutes.
  13. Let the pecan pie cobbler cool for at least one hour before serving.
  14. Optional: Serve with a scoop of vanilla ice cream on top. Enjoy!
