Instructions:
- Preheat the oven to 400°F (200°C).
- In a medium mixing bowl, combine the cubed potatoes with olive oil, salt, pepper, paprika, and Italian herbs until the potatoes are evenly coated.
- Spread the seasoned potatoes onto a baking sheet in a single layer and bake for 15 minutes.
- Meanwhile, in the same mixing bowl (no need to wash), toss the green beans with olive oil, minced garlic, and salt until evenly coated.
- After 15 minutes, remove the baking sheet from the oven and place the seasoned green beans on top of the partially cooked potatoes, spreading them out evenly.
- Return the baking sheet to the oven and bake for an additional 25 minutes or until the potatoes are golden and the green beans are tender.
- Once roasted, serve hot and enjoy.
Notes:
- These Roasted Green Beans and Potatoes can be stored in an airtight container in the refrigerator for up to 3-5 days.
- To reheat, simply warm them in a pan on the stove with a little extra oil, stirring occasionally until heated through to your desired temperature.
