Roasted Green Beans and Potatoes

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a medium mixing bowl, combine the cubed potatoes with olive oil, salt, pepper, paprika, and Italian herbs until the potatoes are evenly coated.
  3. Spread the seasoned potatoes onto a baking sheet in a single layer and bake for 15 minutes.
  4. Meanwhile, in the same mixing bowl (no need to wash), toss the green beans with olive oil, minced garlic, and salt until evenly coated.
  5. After 15 minutes, remove the baking sheet from the oven and place the seasoned green beans on top of the partially cooked potatoes, spreading them out evenly.
  6. Return the baking sheet to the oven and bake for an additional 25 minutes or until the potatoes are golden and the green beans are tender.
  7. Once roasted, serve hot and enjoy.

Notes:

  • These Roasted Green Beans and Potatoes can be stored in an airtight container in the refrigerator for up to 3-5 days.
  • To reheat, simply warm them in a pan on the stove with a little extra oil, stirring occasionally until heated through to your desired temperature.
