Ingredients:

  • 450 grams ground beef
  • 1/2 cup onion, finely chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 can (16 ounces) refried beans
  • 1 can (4.5 ounces) diced green chile peppers
  • 1 can (15 ounces) chili (without beans)
  • 1 can (10.5 ounces) condensed tomato soup
  • 1 can (10 ounces) enchilada sauce
  • 6 large (12-inch) flour tortillas, warmed
  • 2 cups shredded lettuce, divided
  • 1 cup diced tomatoes, divided
  • 2 cups shredded Mexican cheese blend, divided
  • 1/2 cup chopped green onions, divided

Directions:

  1. In a skillet over medium-high heat, crumble the ground beef and cook until evenly browned. Add chopped onion and cook until translucent. Drain any excess grease, then season with minced garlic, ground cumin, salt, and black pepper. Stir in the refried beans and diced green chile peppers until well combined. Remove from heat, but keep warm.
  2. In a saucepan, combine the canned chili, condensed tomato soup, and enchilada sauce. Mix thoroughly and heat over medium heat until warmed through. Turn off the heat and set aside, keeping it warm.
  3. Place a warmed tortilla on a plate. Spoon a generous portion of the ground beef mixture onto the center of the tortilla. Add lettuce and diced tomatoes to your preference. Roll up the tortilla around the filling, ensuring the sides are tucked in. Spoon a generous amount of the sauce over the top and sprinkle with shredded cheese and chopped green onions.
  4. Heat the assembled enchilada in the microwave until the cheese is melted, approximately 30 seconds. Repeat the process with the remaining tortillas and fillings.
