Ingredients for 4 servings:

2 large chicken breasts
1 medium sweet onion (Vidalia)
5 slices of bacon
2 large potatoes
1 cup fresh mushrooms (sliced)
1 (10 3/4 ounce) can of cream of chicken soup
3/4 cup chicken broth
1 tablespoon melted butter
Salt
Pepper
Garlic powder

Directions:

Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
Cook the bacon until crispy, then crumble it and set it aside. Reserve the bacon grease.
Peel the potatoes and cut them into cubes. Fry the potatoes in the reserved bacon grease until golden brown. Remove and set aside.
Dice the sweet onion and season it with salt, pepper, and garlic powder. In the same pan, sauté the onion in the bacon grease until it becomes translucent. Remove and set aside.
In the same pan, sauté the sliced mushrooms until they are cooked and slightly browned. Remove and set aside.
Coat the chicken breasts with melted butter, then season them with salt and pepper. Grill the chicken until cooked through. Once cooked, cut the chicken into cubes.
In a bowl, mix the cream of chicken soup with the chicken broth. Season with pepper to taste, creating a sauce.
In an 8×8 glass baking dish, combine the cooked chicken, mushrooms, onions, and potatoes. Pour the sauce over the mixture and stir well, ensuring everything is evenly coated.
Cover the dish with foil and bake it in the preheated oven for 30 minutes.
Remove the foil, sprinkle the crumbled bacon over the top of the casserole, and bake for an additional 10 minutes, uncovered.
