  • 2 packs of cornbread mix (about 59¢ each)
  • 1.5 lbs ground beef
  • 1 can of Rotel (diced tomatoes and green chilies)
  • 1 can of whole kernel corn
  • 1 can of Ranch-style beans
  • 1 cup shredded cheese
  • 1 pack of taco seasoning


  1. Prepare the cornbread mix according to the package instructions and set it aside.
  2. Preheat your oven to 425°F (220°C).
  3. In a skillet over medium heat, brown the ground beef. Drain excess fat.
  4. Add the taco seasoning, undrained Rotel, undrained Ranch-style beans, and drained corn to the beef. Simmer for about 5 minutes.
  5. Combine the prepared cornbread mix with the beef mixture. Mix in the shredded cheese until well combined.
  6. Pour the mixture into a greased 9×13-inch casserole dish.
  7. Bake for approximately 25-30 minutes or until a toothpick inserted into the center comes out clean.
