Ingredients:

  • 1 lb. Boneless, skinless chicken breast, cubed
  • 1 tbsp + 1 tsp Olive oil, divided
  • 1 Yellow bell pepper, thinly sliced
  • 1 cup Sliced mushrooms
  • 2-3 cups Broccoli florets
  • 4 Cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tbsp Soy sauce
  • ¾ cup Chicken broth
  • 1 ½ tsp Sugar
  • 2 tsp Sesame oil
  • 2 tsp Cornstarch

Instructions:

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  2. Add broccoli, sliced mushrooms, and yellow bell pepper to the heated skillet. Cook for 5-6 minutes until the vegetables begin to tender. Remove the vegetables, cover, and set aside.
  3. Add one teaspoon of olive oil to the skillet and cook the chicken breast pieces until they are no longer pink in the center and fully cooked. Season with salt and pepper to taste.
  4. Mix the cooked vegetables back into the skillet.
  5. In a separate bowl, combine soy sauce, sugar, chicken broth, sesame oil, and cornstarch. Mix well.
  6. Pour the sauce over the chicken and vegetables in the skillet, stirring to coat evenly. Cook for an additional 2-3 minutes until everything is well-coated, and the sauce has thickened.
  7. Serve the Sesame-Garlic Chicken Stir Fry over white rice if desired. Enjoy your flavorful and satisfying meal!
