Ingredients:

  • 10 pieces of chicken (thighs and legs, skin-on)
  • 2 cups wheat flour
  • 5 tablespoons cornstarch
  • 2 eggs
  • 1 cup evaporated milk
  • 1 tablespoon mustard
  • 1 tablespoon chicken or meat seasoning
  • 1 tablespoon minced garlic
  • Salt and pepper (to taste)
  • Oil for frying

Instructions:

  1. Begin by thoroughly washing and drying the chicken pieces. Lightly season them with a pinch of salt and pepper.
  2. In a large pot, partially submerge the chicken pieces in water and cook over low heat with the lid on for 10 minutes.
  3. While the chicken is cooking, prepare two separate bowls. In the first bowl, combine flour, cornstarch, minced garlic, and seasoning, mixing well. In the second bowl, whisk together eggs, evaporated milk, mustard, salt, and pepper until thoroughly combined.
  4. Once the chicken is cooked, remove it from the water and pat it dry. Coat each piece in the flour mixture, dip it into the egg mixture, and coat it again in the flour mixture. Let the coated pieces rest in the refrigerator for a few minutes.
  5. In a stockpot or high-sided skillet, heat enough oil over medium heat to submerge the chicken pieces.
  6. Once the oil is hot, take the chicken out of the refrigerator and fry 2-3 pieces at a time until they turn a beautiful golden brown on all sides. Make sure to regulate the heat to prevent burning.
  7. After frying, place the chicken on a plate lined with absorbent paper towels to drain excess oil.

Enjoy your crispy and delicious homemade KFC-style chicken!
